you can’t, it’s a pain google scans your site automatically and determines what it is about and then sends “appropriate ads” you can try putting keywords in the meta tags, that is what I have done.
Google ads also take note of the url in the decision of what ads to send which is my problem as the URL is not relevant to my content

Yes, Google determine ads by your Url, Title, description tag, H tags, Bold tags, text, … So if you want art related ads you should have art related words on page in as many different positions as you can.
